Don't use "fly outs, rollovers, dropdowns", and other design elements that hide page content. The reason: Users do not see the content until they have decided where to click.

Hidden navigation features can be useful shortcuts to expert users. But then again, users spend most of their time on other sites than your own and are not likely to learn how stuff should be done on a particular site.
